The California roll was invented in 1973 by Ichiro Masita, the chef of the Tokyo Kaikan restaurant in Los Angeles, California, USA.
And only then, in the 80s, this recipe spread throughout America, and then gained popularity in Japan and around the world.
Classic roll "California" refers to the kind of "inverted" rolls or roll "inside out," a variety of sushi uramaki - "rolls inside out."
